Minding Your Peas and BBQ's

I made a really yummy pea salad for our family BBQ tonight (sorry, no pictures).  It was quick and easy, and it was super tasty.  You should try it.

Crunchy Pea Salad

1/3 cup mayonnaise
1 tablespoon balsamic vinegar
1 teaspoon sugar
1 lb. frozen peas, thawed and drained
2 ribs celery, diced
1/2 cup salted cashews, roughly chopped
1/4 red onion, finely chopped
bacon, finely crisped
salt and pepper to taste

Whisk mayonnaise and vinegar together.  Add everything else, mix gently.  Chill 1 hour.  Eat with a spoon.

I actually forgot to add the bacon and it was still awesome without it.  It is a great substitute for potato or pasta salad and is nice and light.  I used a whole bag of peas because I was feeding a lot of people, but you can make it smaller for your needs.  Enjoy!
