Goat Cheese Goodness

Keith and I had this fabulous appetizer at a restaurant a few days ago.  I can't remember the long and sophisticated name, but it was so delicious, that we had to come home and recreate it ourselves.  I did take a picture of our homemade dish, but as I still cannot upload pictures to blogger, you will have to do without.  We are thinking of taking this to a Christmas party later in the season, it was that yummy.  And I've now developed an unbelievable love of roasted garlic.

Goat Cheese and Roasted Garlic Toast
  • 2-3 different kinds of bread cut into medium-sized triangles (pitas, French bread, pumpernickel, rye, whatever you fancy)
  • Goat Cheese
  • 1-2 bulbs of roasted garlic (learn how to roast garlic here)
  • 2-3 different types of jams and jellies (the restaurant had a fig jam and a cranberry relish.  We tried blueberry and raspberry jams because we couldn't find any fig jam at the store)
Take a piece of bread and smear a little goat cheese on it.  With your hands or a fork, squeeze or pull out a full clove of garlic from the bulb.  Smash it as well as you can all over the bread.  Choose your flavor of jam and spread it on top.  

Super easy and super delicious.  I hope you try it because it is GOOD!!  (And if you don't like goat cheese, you could probably use another soft or cream cheese).
